Composition and terroir:
This Burgundy wine from Domaine Génot-Boulanger comes from vines planted on a plot that was once covered with brambles, hence its name "Ronceret". It is located under the 1st cru "Les Champans" down hill. The soil is dense with stony limestones and full of oxides of iron. Manual harvest. Traditional winemaking in wooden vats. Aging for 12 months in oak barrels (of which 20% new barrels), then 6 months in stainless steel tanks. No gluing or filtration.
