In 1584, Pierre Gosset who was an alderman of Aÿ and a winemaker, produced still wines, often red, with the harvest of his own vineyards. At the time, the two wines competed at the table of the kings of France: The wine of Aÿ  and the wine of Beaune. Both were developed from the same noble grape varieties: the Pinot Noir and the Chardonnay. In the XVIII century, the wines of Aÿ and the region became effervescent.

For more than four centuries, everything is implemented in order to perpetuate the expertise of a cottage industry. Indeed, still today, the wines are presented in antique bottles which are the exact reproduction of the ones used since the XVIII century by Champagne GOSSET.
